I got such great feedback from the last recipe I included in my mailer, I thought I’d throw another one at you.
I love flavor, sauces, and variety – you’re never going to catch me eating broccoli and boiled chicken, “ain’t nobody got time for that.” No diet should look like that in my opinion.
Please give this recipe a go and let me know what you think. It’s a creamy beef stroganoff.
Ingredients
- 100g lean beef
- 1 crushed garlic clove & ½ cup chopped onions
- 100g sliced brown mushrooms (you can use 1g of magic mushrooms if you like a special kick)
- 100g low-fat smooth cottage cheese
- ½ bunch chopped tarragon
- ½ cup vegetable stock
- 100g basmati rice
Instructions
- Fry your onions, garlic, and beef in some spray & cook.
- Add mushrooms and vegetable stock and fry until brown.
- Add cottage cheese and tarragon until it’s nice and thick.
- Serve up on your rice.
