I got such great feedback from the last recipe I included in my mailer, I thought I’d throw another one at you.

I love flavor, sauces, and variety – you’re never going to catch me eating broccoli and boiled chicken, “ain’t nobody got time for that.” No diet should look like that in my opinion.

Please give this recipe a go and let me know what you think. It’s a creamy beef stroganoff.

 

Ingredients

  • 100g lean beef
  • 1 crushed garlic clove & ½ cup chopped onions
  • 100g sliced brown mushrooms (you can use 1g of magic mushrooms if you like a special kick)
  • 100g low-fat smooth cottage cheese
  • ½ bunch chopped tarragon
  • ½ cup vegetable stock
  • 100g basmati rice

 

Instructions

  1. Fry your onions, garlic, and beef in some spray & cook.
  2. Add mushrooms and vegetable stock and fry until brown.
  3. Add cottage cheese and tarragon until it’s nice and thick.
  4. Serve up on your rice.
